Stuffed Sweet Potato

Ingredients

  • ½ cup Flanagan Farm Classic Sauerkraut, lightly drained
  • 1 roasted sweet potato
  • 1/3 cup garbanzo beans
  • 1/3 cup shaved brussels sprouts
  • ¼ cup Good Culture cottage cheese
  • Everything Bagel Seasoning
  • 1 TBS Olive oil
  • Kosher salt
  • Black pepper

Directions

  • Preheat the oven to 425’ F.
  • Place sweet potato on a parchment lined baking sheet.
  • In a medium bowl toss together the garbanzo beans, brussels sprouts and olive oil, season well with salt.
  • Top sweet potato with brussels sprouts mixture and place in the oven, roast for 20 minutes. Remove sweet potato from oven and top with cottage cheese, place back in oven for 8-10 minutes until cottage cheese is hot and bubbly.
  • Add sauerkraut and sprinkle with everything bagel seasoning.
