Kimchi Tuna Salad

Ingredients

  • 1 cup Flanagan Farm Kimchi Style Sauerkraut
  • 2 TBS Flanagan Farm Kimchi Style Sauerkraut brine
  • 1 – 5 oz can of tuna, well drained
  • 2 green onions, thinly sliced
  • ¼ cup cilantro, chopped
  • 12 mint leaves, torn
  • 1 lime, zested and juiced
  • 1 TBS Soy or Tamari
  • 1 tsp Sesame oil
  • 1 TBS Olive oil
  • Sesame seeds
  • Kosher Salt
  • Black pepper

Directions

  • In a medium bowl add tuna, green onion, sauerkraut and mix well, being sure to break up tuna.
  • Add brine, lime juice, lime zest, soy, sesame oil, olive oil and season well with salt and pepper, mix well.
  • Add cilantro and mint and toss to combine.
  • Sprinkle with sesame seeds.
  • Serve with sliced vegetables, lettuce leaves, sesame crackers or as a sandwich on your favorite toasted, seedy bread.
