Place turkey, brine, mustard, egg yolk, salt and pepper in a bowl and mix to combine, divide into 4 patties about ½ inch thick (the mixture will be moist)
Heat a non-stick pan over medium high heat, spray with avocado oil. Once hot add patties and cook about 5 minutes on each side, until fully cooked.
Top each burger with feta cheese
To build burger:
Toast bottom bun, smear with Greek yogurt
Top yogurt with cucumber and tomato
Place turkey patty on top of tomato
Top patty with ¼ cup Beet Sauerkraut and lettuce
Add bun to burger and serve

For burger patties
1# ground turkey
2 TBS Beet Sauerkraut brine
1 TBS Dijon mustard
1 egg yolk
¼ tsp kosher salt
1/8 tsp black pepper
Avocado spray/oil
For building burger
4 buns, toasted
½ cup feta cheese
4 TBS Greek yogurt
1 cucumber thinly sliced
1 tomato thinly sliced
1 cup Beet Sauerkraut, lightly drained
8 lettuce leaves
