Classic Kale Salad

Ingredients

  • 1 cup Classic Sauerkraut, lightly drained
  • 1 cup shredded carrots
  • 1 small fennel bulb, quartered and thinly sliced
  • 1 small Honeycrisp or granny smith apple, quartered and thinly sliced
  • 2 cups baby kale
  • 3 TBS Classic Sauerkraut brine
  • 3 TBS Olive oil
  • Kosher salt
  • Black pepper

Directions

  • In a large bowl toss together sauerkraut, carrots, fennel and apples.  
  • Add brine, olive oil and season with salt and pepper, toss to combine.
  • Add baby kale and toss until well coated, serve immediately.
  • Protein add-on: Would be delicious with salmon or chicken!
