Classic Kale Salad
Servings 2
Ingredients
1 cup Classic Sauerkraut, lightly drained
1 cup shredded carrots
1 small fennel bulb, quartered and thinly sliced
1 small Honeycrisp or granny smith apple, quartered and thinly sliced
2 cups baby kale
3 TBS Classic Sauerkraut brine
3 TBS Olive oil
Kosher salt
Black pepper
Directions
In a large bowl toss together sauerkraut, carrots, fennel and apples.
Add brine, olive oil and season with salt and pepper, toss to combine.
Add baby kale and toss until well coated, serve immediately.
Protein add-on: Would be delicious with salmon or chicken!
