Citrus Salad

Serves 2

Ingredients

  • Flanagan Farm Organic Beet Kraut ½ cup, lightly drained
  • ½ cup Greek yogurt *
  • 1 cup arugula
  • 1 large or 2 small oranges (can use any citrus, grapefruit, blood orange, mandarin etc.), peel and pith removed, cut into slices or half-moons 
  • 2 TBS Roasted pistachios, chopped
  • Kosher salt
  • Black pepper
  • Olive oil
  • Balsamic glaze
  • Add a protein**

* Can substitute dairy free yogurt if vegan

** Pairs well with Chicken or Salmon

Directions

  • On a large plate, spread yogurt and top with citrus
  • Sprinkle the arugula over the citrus and yogurt then add Flanagan Farm Beet kraut
  • Top with pistachios
  • Season liberally with salt and pepper
  • Drizzle with olive oil and balsamic glaze
