- Flanagan Farm Organic Beet Kraut ½ cup, lightly drained

- 1 cup arugula
- 1 large or 2 small oranges (can use any citrus, grapefruit, blood orange, mandarin etc.), peel and pith removed, cut into slices or half-moons
- 2 TBS Roasted pistachios, chopped
